For St. Patrick's Day: Lightning-Fast Irish Chicken & Cabbage Skillet

Just in time for St. Patrick’s Day, here is a quick and easy way to enjoy some classic Irish flavors, using pre-cooked chicken breast for a lean, speedy meal!

Ingredients (Makes 2 Servings)

  • 6oz pre-cooked chicken breast, shredded or chopped
  • 2 cups green cabbage, shredded
  • ½ cup carrot strips
  • ½ cup onion, sliced
  • 2 cloves garlic, minced (or just use a cheese grater)
  • 1 tbsp butter (or olive oil for a lighter version)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried thyme
  • OPTIONAL: ½ tsp ground mustard (for a kick)
  • ¼ cup chicken broth (or water)
  • 1 tsp apple cider vinegar (for brightness)
  • OPTIONAL: 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat butter (or oil) in a large skillet over medium heat.
  2. Sauté onions and carrots for 2 minutes until slightly softened.
  3. Add garlic, cabbage, salt, pepper, thyme, and mustard. Sauté for 3–4 minutes.
  4. Stir in chicken broth and pre-cooked chicken. Cover and let cook for another 3 minutes.
  5. Stir in apple cider vinegar, cook for 1 more minute, then remove from heat.
  6. Garnish with fresh parsley and serve warm!
