For St. Patrick's Day: Lightning-Fast Irish Chicken & Cabbage Skillet

Just in time for St. Patrick’s Day, here is a quick and easy way to enjoy some classic Irish flavors, using pre-cooked chicken breast for a lean, speedy meal!
Ingredients (Makes 2 Servings)
- 6oz pre-cooked chicken breast, shredded or chopped
- 2 cups green cabbage, shredded
- ½ cup carrot strips
- ½ cup onion, sliced
- 2 cloves garlic, minced (or just use a cheese grater)
- 1 tbsp butter (or olive oil for a lighter version)
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried thyme
- OPTIONAL: ½ tsp ground mustard (for a kick)
- ¼ cup chicken broth (or water)
- 1 tsp apple cider vinegar (for brightness)
- OPTIONAL: 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat butter (or oil) in a large skillet over medium heat.
- Sauté onions and carrots for 2 minutes until slightly softened.
- Add garlic, cabbage, salt, pepper, thyme, and mustard. Sauté for 3–4 minutes.
- Stir in chicken broth and pre-cooked chicken. Cover and let cook for another 3 minutes.
- Stir in apple cider vinegar, cook for 1 more minute, then remove from heat.
- Garnish with fresh parsley and serve warm!
